An amazing pet nat by Jan Klein. Ruby Soho is made using the ancestral method, with part of the fermentation taking place in the bottle from 100% Regent grapes. A cross between Sylvaner and Muller Thurgau. Red forest fruits, cassis, mint, just like a cocktail and a fantastic aperitif.
