
Xarello by Ton Rimbau. Made under strict permaculture conditions and the influence of the moon. Aged for 9 months in French oak barrels, then further without added sulfur in ceramic bottles, put vertically under water in a bassin underneath his cellar. Always in non-negative geobiological zones, measured by Ton himself. This wine is rich, yeasty, wild, rare, profound, mineral and very very good.
Probably the most special winemaker we've met and visited. Ton Rimbau from Porcellanic, based in Vilobi Penedes. All wines are made with the Permaculture method, which is a method of ancestral agriculture that utilises a natural ecosystem. The vines grow as a forest, all grapes are harvested by hand on fruit days with a decreasing moon and low tide, from vines that have not been cultivated for more 11 years old where spiders act as a natural insecticide. The bottles stay under water until released to make sure the best quality of the wines and preserve them from light. Very special, very rare.
