By fermenting the wines on de lie (yeast) you can get a nice round wine with a good acidity, and he succeeded. Slightly yeasty, fresh and mineral Chardonnay with body (and not that vanilla tone of too new wood, luckily) And also a little oxidative which makes it just that little bit more exciting.
Domaine de la Chappe is located in Tonnerre, Northern Burgundy and near Chablis. Vincent took over, planted his father's vineyards in 2003 in the 1980s, when the vineyards in the Tonnerre region were brought back to life by him after the phylloxera. Vincent processes the vineyards purely organically and works with a hands-off mentality in the cellar, so no intervention! The wines are always energetic, mineral and special.
