Bourgogne Chardonnay from Tonnerre, near Chablis. By winemaker Vincent Thomas from Domaine de la Chappe. Made from his own vineyards planted by Vincent's father in the 1980s, when the vineyards in the Tonnerre region were brought back to life by him after the phylloxera. This parcel consists of a lot of clay soil, which has the effect that the grapes ripen early. By fermenting the wines on the lie (yeast) you can get a nice round wine with good acidity, and he succeeded. A bit yeasty, fresh and mineral Chardonnay with body (and not that vanilla note of too new wood, thankfully).
