Chablis by Vincent Thomas, Domaine de la Chappe. He himself owns only 2.5 hectares of vineyard, taken over from his father in 2003 and converted directly to organic. As a negoce he therefore also buys grapes (organic) from the area in order to be able to produce more. This proves to be difficult, in Chablis, where few winemakers work organically, let alone natural. He is 1 of the 2 natural winemakers in the area. Not your typical Chablis, but a rich, fuller Chablis, with still that nice minerality.
