The wine itself is fermented for 8 days with the whole bunches without intervention, very softly pressed with respect for the grapes and the true color of Pinot gris; rose, copper, ramato. And the taste? Strawberries, salmiak and minerals.
Farid Yahimi aka Sons of Wine is an organic négoçiant, based in Beblemheim, Alsace, who has a very distinct, young and wild style of winemaking. Unique to Alsace ... or even the world.
